Starting with a delicious, and easy, Spinach Dip, these dishes are so memorable, you’ll want to phone home. Then our Pasta Salad recipe pays homage to the wildly colorful decade with an array of colors sure to brighten even the drabbest day. And you can’t talk about the ‘80s without mentioning after-school snacks, which is where these Pesto Pinwheels come in. They’re the perfect no-bake solution anytime you need to feed your Gremlins (as long as you don’t feed them after midnight).

For dinner, the Blackened Chicken is the thing sweet dreams are made of. Make a large portion of your seasoning blend and store the extra for pork, seafood, or roasted veggies.

Save room for dessert! These Butterscotch Blondies will take your breath away. And when you see how easy they are, you’ll be walking on sunshine!

One of my favorite ‘80s recipes is Blackened Chicken, in part because the seasoning is so versatile. In addition to chicken, the seasoning you make for this works on so many other dishes—everything from steak to grilled vegetables to fish. Plus, you can make it as hot (or not) as you like, since you’re in control of the recipe. And there’s nothing like cooking in a cast iron skillet.

Your first step is to make the seasoning. Simply combine your smoked paprika, onion powder, garlic powder, thyme, oregano, and cayenne in a small bowl and blend well. Once your mix is ready, coat your chicken with it and cook in a hot skillet for about five minutes on each side.

That’s it! You now have blackened chicken ready to serve. Slice it to put in a salad, or enjoy it as it is.
